If this is your case and it cannot happen without your chocolates, ice creams or biscuits, we have prepared three versions of classic Latin desserts: tres leches, coconut flan, and ice pops, with less sugar, vegan style and gluten-free, so that when taking them do not feel guilty. If you are a fan of the Tres Leches Sponge Cake in your house, so called because it is soaked in three different types of milk, do not worry. The trick is to substitute the caloric milks from the traditional recipe for healthier ones, such as coconut.

This recipe is not vegan because it uses eggs, milk and butter. But it has less fat content than the original.

You will need:

1/2 cup of coconut flour

1/2 teaspoon of baking powder

1 cup of granulated sweetener

1 pinch of salt

5 eggs separating the white and yolk

1/2 cup of melted and cooled butter

1 teaspoon of vanilla extract

1/2 cup coconut or almond milk, sugar-free

1/2 cup condensed milk

1/2 cup skim milk

Optional: 1/4 cup brandy

  1. Preheat oven to 375ºF and prepare a round pan with baking paper.
  2. Mix the coconut flour, yeast and half of the sweetener in a bowl and reserve.
  3. Pour the egg whites into the mixer with the rest of the sweetener and mount to the snow point.
  4. In another bowl mix the egg yolks, the butter, the vanilla extract.
  5. Add the coconut flour mixture in which you have the egg yolks.
  6. Gradually incorporate the egg whites into snow.
  7. Pour the mixture into the mold and leave it in the oven for about 30 minutes. Then let it cool for 20 minutes and do not remove it from the mold.

  2. In a bowl, mix the coconut milk, condensed milk and skim milk. And if you want, the brandy.

1 cup coconut milk

2 tablespoons coconut sugar

1/2 teaspoon agar-agar (an algae extract with a gelling capacity)

  3. When they are firmer but still warm, sprinkle the coconut sugar on top, which after a while will moisten and turn into caramel.

After a hearty dinner or a hot afternoon, who doesn't fancy a delicious popsicle? If you are concerned about the calories and ingredients used in industrial ice creams, nothing better than this homemade recipe that we propose of pumpkin and spice popsicles.

For 12 popsicles:

3 1/2 cups almond milk

4 tablespoons pumpkin puree. Boil the pumpkin for 20 minutes, let cool and beat in the food processor or with the mixer until obtaining a silky texture.

4 tablespoons of dulce de leche. An option for vegans is to use liquid caramel instead of dulce de leche.
