Ingredients
- 1/2 lb. cassava
- 1 tbsp. almond milk
- 3 oz. ground chicken meat
- 1 clove garlic, minced
- 1 tbsp. chopped peppers
- 1 stalk celery, chopped
- 1/3 chopped onion
- 1/2 chopped hard-boiled egg white
- 1 tsp. chopped cilant
- 1 tbsp. of natural tomato sauce
- 1/3 chopped tomato
- Cooking spray
- Pinch of salt and pepper
Preparation
- Preheat the oven to 350º.
- In a pot of boiling water, add the yucca with a pinch of salt. Cook until the yucca is soft.
- In a skillet, spray a little cooking spray and add all the vegetables and sauté until soft. Once the vegetables have cooked, add the ground chicken meat together with the natural tomato sauce and the chopped egg white, stir well and cook for 10-15 min until the chicken is fully cooked.
- Set the chicken and vegetables aside.
- In a bowl add the yucca and the tablespoon of almond milk and puree it. In a baking dish, spray cooking spray and place one layer of the cassava puree, the chicken and another layer of cassava on top. Bake for 20 min. or until browned on top.
- Pour yourself a piece about the size of your open palm and enjoy!
