Mexican television presenter Michelle Galván shared with her husband Fernando Guajardo an easy recipe to make at home: a delicious cactus salad.

The couple participated in a Live from the intimacy of their kitchen, through the People en Español Facebook account, in which they stressed that this family salad is typically a complement to main dishes of chicken, fish or beef.

According to the Mexican magazine Muy Interesante, the benefits of this plant include improving the digestion process and the regulation of blood sugar levels. Furthermore, it is an excellent natural antioxidant.

Nopal Salad

Time: 15 minutes | servings: 3

Ingredients:

3 jars of cooked nopal or 7 stalks of fresh leaves

1/4 of onion cut into small cubes

garlic to taste

1 tomato in small cubes

1/2 green jalapeño pepper

2 small tablespoons of apple cider vinegar

2 tablespoons of olive oil

1 lemon squeezed

Spinach and coriander to taste

Salt and pepper

1/4 of fresh cheese or panela

1/2 avocado

For the preparation, the fresh nopal is cut into strips and boiled in water with onion, garlic and salt. The water and natural drool of the cactus should be drained in a strainer.

Then, the onion, tomato, a touch of chili, coriander, garlic and spinach are mixed, all cut very finely. Add two tablespoons of apple cider vinegar, lemon juice, sea salt, two tablespoons of olive oil and pepper to taste.

Finally the salad is seasoned and all the ingredients are mixed. At the end, pieces of avocado are added on top of the mixture and the grated cheese with a sprig of coriander as decoration.
