So what should you do to keep the avocado from turning dark? The portal quotes Harold McGee author of On Food and Cooking: The Science and Lore of the Kitchen, who explains that if you add lemon or lime to avocados, as they are acidic, that means that the enzymes that cause the brown color cannot work properly and stay the natural color.

If you open an avocado and want to save a piece or leftover guacamole or mashed avocado, McGee explains that you need to use plastic wrap to wrap it. Be careful, you have to do it very well, sticking the plastic paper to the surface of the avocado, either in pieces or mashed to prevent air from entering. If air enters, the dark color will appear. Plastic wrap paper works as a kind of protective wall, says McGee. If after saving it, you see any dark part, remove it and eat the rest that is green and fresh.
